Royal Paella
Ingredients
- 250g long grain rice
- 4 chicken thighs
- 400 g clams
- 200 grams of squid pieces
- 2 crushed tomatoes
- 1 red bell pepper, diced
- 250 grams of raw shrimp
- 1 chopped onion
- 10g paella spice mix
- 50 cl chicken stock
- 1 lemon
- Salt / pepper
Recipe
- Heat a pan of clams to open them, then set aside.
- In the same pan, fry the peppers for 1 minute, set aside, then fry the chicken for 2 minutes on each side, then remove.
- Finally, fry the squid and shrimp pieces until brown, then set aside.
- Saute the onions with a spoonful of oil, then add the rice until it becomes translucent.
- Add pepper, squid, spices, chicken and pour in 40cl of chicken stock.
- Place the baking tray in the oven for 15 minutes at 200°C.
- After 15 minutes, add the shrimp, clams and their juices, and the remaining chicken stock.
- Lower the oven temperature to 180°C and put the pan back in the oven for 10 minutes.
- When removed from the oven, adjust the seasoning and squeeze in some lemon juice.
Tip: You can add chorizo and chili to spice up your paella.
